A little lobster history.

Long ago, lobsters were so plentiful that Native Americans used them to fertilize their fields and to bait their hooks for fishing.

The early settlers easily found an abundance of lobsters because the tide washed piles of the crustaceans onto the shore. (Maine lobstering by boat and trap didn't exist prior to the 1850s.)

In colonial times, lobsters were considered "poverty food." They were harvested from tidal pools and served to prisoners, and to indentured servants.

There was an Indentured Servant Rebellion in New England. The servants were rebelling against their daily diet of lobster.

The disdain for lobster waned over time and the poor man's chicken soon became the rich man's prize.

Maine is the largest lobster producing state in the nation.
